Christophe Adam, creator of the L’Éclair de Génie, is a brilliant guy.
His professional figure is divided into artistic director, entrepreneur, creative and, of course, pastry chef. He gained experience at the starred restaurant Crillon and then head pastry master of Fauchon, then in 2012 his career changed. Thanks to the encounter unexpected with the entrepreneur Charles Lahmi, he realized his concept store mono-product around Eclair and, taking a lead from the great houses of luxury, cosmetics and fashion, he created the “Eclair de Génie”.
The first store opened in the Parisian district of Marais and, thanks to the immediate success of the point’s sale in the French capital quickly become nine. But this is just the beginning. The expansion touches Asia, with several stores opened in Japan, Korea and Hong Kong. Now ’Éclair de Génie is going to conquer the European capitals, with Milan choice among the first European capitals. The Milanese are two outlets, in the heart of Brera (Corso Garibaldi, 55) and in the Navigli area (Corso di Porta Ticinese, 76) complete with a laboratory.

Therefore, the mastermind behind the success of L’Éclair de Génie is Christophe Adam. One of the most talented chefs of his generation with more than 15 years of career behind him, voted by Pudlo “Best Pastry Chef of the Year 2014” and Relais Desserts “Best Pastry Chef of 2015”, Adam realized all his talent and creativity in a new reference product of French pastries: “l’Éclair”.
But what is this new pastry much like? It has an elongated shape (a long and narrow strip about 8 centimeters) and is made with the same dough of cream puffs. The traditional filling is made with pastry cream to coffee or chocolate, and the ice is of the same flavor and color of the filling, revolutionized by Adam for taste, color and image. And Christophe Adam made it his trademark. The most popular are that the lemon cream and yuzu, the meringue and hazelnut streusel, Grand Cru by Guanaja chocolate cream and chocolate icing and Choco Pistache, by Pistachio.

At these pastry shops you can find not only éclair, but also handcrafted pralines by the Paris laboratory and the novelty Chouglacé, the éclair ice cream. The opening Milan pastry shops, inaugurated on September 14th, inspired the art of Adam who made an éclair called “I love Milan”, starring the Vogue Fashion Night Out in Milan.

More than two stores, two new Eclair de Génie are two boutique patisserie, with the ships on which a workshop. But there’s more: the Parisian brand has decided to invest and believe on our city, so that is imminent opening of another shop in the historic center.
As for the challenges ahead, the brand is preparing to land in the United States, United Arab Emirates, Canada and Russia. Meanwhile, we are only too happy that Christophe Adam eclairs are finally arrived in our city.
